1 large egg
2 tsp Dijon mustard
2 tsp fresh lemon juice or white wine vinegar (I actually use both)
1 1/3 cup vegetable oil
In a food processor (do NOT use a blender) add the egg and Dijon mustard and process. Then slowly, really slowly, add the Vegetable oil while processing. Finally, add the lemon juice and mix well. The process takes about 5 minutes total, but you can always leave it a little bit more until you see it's as creamy as it can get.
You can always play with the quantities, for me this is the right amounts, but if you think it needs more or less lemon juice or mustard, you can do as you like. There's no messing this up since you can always add more vegetable oil if the flavor is not as you wanted, you'll just end up with more mayonnaise than expected.
